1/4 lb. unsalted butter or low calorie margarine
1/2 cup Turbinado, or Molasses cane sugar
1 large egg
1-1/4 cups flour
1/2 tsp. baking soda
1 tsp. baking powder

1 Tbsp. water
1 Tbsp. fresh lemon juice
1 tsp. Frontier Vanilla Extract
1 cup carrots\grated

Directions: Preheat oven to temperature 350°F. In medium bowl combine the flour, soda, baking powder and salt. Set aside. In bowl of electric mixer, cream together butter and sugar. Add the egg and mix well. Add the water, lemon juice, Frontier Vanilla Extract, and grated carrot and mix well. With mixer on low, gradually add the dry ingredients and mix to thoroughly combine, stopping the mixer occasionally to scrape down the bowl.
