Ingredients:
3 Tbsps. fat from roast turkey drippings, or butter
3 Tbsps. all purpose flour
1/2 cup reserved turkey cooking juices, or chicken stock
1-1/4 cups chicken stock, or giblet stock
1/2 cup pure maple syrup
Instructions:
Heat turkey fat in a heavy pan over medium heat. Add flour and stir constantly 2-3 minutes until flour turns golden. Slowly stir in remaining ingredients and salt and pepper to taste. Simmer mixture about 10 minutes, stirring frequently until gravy thickens.

This was very rich--I made it with butter instead of the pan drippings. The sweetness was a nice change of pace.
