German Bean and Sausage Soup

Prep Time: 10 Minutes Cook Time: 20 Minutes Total Time: 30 Minutes

Ingredients:

  • 1 tsp. oil
  • 1/2 cup onion\cooked, chopped
  • 1 cup carrots\cooked, sliced
  • 1 cup potato\grated, peeled, cubed
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp. dried marjoram leaves (optional)
  • 14 oz. beef stock
  • 1/2 lb. smoked turkey kielbasa, cut into 1/2 inch slices
  • 1 lb. canned Great Northern beans, undrained
  • 14 oz. canned cut green beans, undrained

Instructions:

Heat oil in a saucepan over medium heat. Sauté onion 4-5 minutes, stirring frequently, until tender. Add carrots and next 4 ingredients. Season with salt and pepper to taste. Bring to a boil. Reduce heat to low, cover and simmer about 15 minutes or until vegetables are tender. Add sausage and beans. Cook until thoroughly heated.

German potluck at St. Patrick's Catholic Church tonight! I selected this recipe because it sounded good and easy. I was right! Easy to prepare and is delicious!!! It is rainy outside and a good soup makes me feel cozy. I will make this one again and again! May God Bless! Cheri
