Corn Muffins

Prep Time: 15 Minutes Cook Time: 15 Minutes Total Time: 30 Minutes

Ingredients:

  • 3/4 cup plus 2 Tbsps. all purpose flour
  • 1/4 cup plus 2 Tbsps. cornmeal
  • 2 Tbsps. sugar
  • 1-1/2 tsps. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 cup milk
  • 2 Tbsps. orange juice
  • 2 Tbsps. unsalted butter, melted
  • 2 Tbsps. honey

Instructions:

Preheat oven to temperature 350°F. Butter 2 muffin cups per person. Sift together dry ingredients in a mixing bowl. Blend remaining ingredients in another bowl and transfer to dry ingredients. Stir until smooth. Do not over-mix. Fill muffin cups about 2/3 full. Bake 15-20 minutes or until golden brown.
