Steamed Summer Squash with Cheese Sauce

Prep Time: 5 Minutes Cook Time: 5 Minutes Total Time: 10 Minutes

Ingredients:

  • 2 lbs. summer squash, cut into 1/2 inch pieces
  • 1 cup lowfat milk
  • 1/2 lb. queso quesadilla cheese, cut into cubes

Instructions:

Place squash in a steamer basket over boiling water. Cover saucepan and steam 3-4 minutes or until just tender. Combine cheese and milk in a heavy saucepan over medium low heat. Stir occasionally until cheese is melted and mixture is thickened. Serve sauce over squash.
