Chicken with Red Wine

Prep Time: 10 Minutes Cook Time: 50 Minutes Total Time: 60 Minutes

Ingredients:

  • 4 chicken breast halves with bone, skinless
  • 1/8 tsp. dry mustard
  • 1/8 tsp. ground mace
  • 1/8 tsp. ground cumin
  • 1/8 tsp. sage
  • 3 cloves garlic, peeled
  • 1 green bell pepper\cooked, seeded, quartered
  • 1 onion\cooked, peeled, cut into wedges
  • 1/2 cup dry red wine
  • 2 Tbsps. sherry vinegar
  • 1 cup canned whole tomatoes, coarsely chopped

Instructions:

Preheat oven to temperature 350°F. Place chicken in a lightly oiled baking dish. Combine next 4 ingredients and salt and pepper to taste in a bowl. Mix thoroughly. Rub spice mixture on chicken. Arrange garlic, bell pepper and onion around chicken. Add last 3 ingredients. Bake 50 minutes, uncovered, or until chicken breasts are cooked throughout.
