Strawberry Rhubarb Tart

Prep Time: 15 Minutes Cook Time: 40 Minutes Total Time: 55 Minutes

Ingredients:

  • 1 sheet frozen puff pastry
  • 3 cups strawberries, hulled and sliced
  • 1 lb. rhubarb, thawed if frozen, trimmed and cut into 1/2 inch pieces
  • 1-3/4 cups sugar, more if rhubarb is very tart
  • 2 Tbsps. cornstarch
  • 3/4 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 3 Tbsps. all purpose flour
  • 3 Tbsps. unsalted butter, cut into small pieces

Instructions:

Preheat oven to temperature 400°F. Bake puff pastry sheet according to package directions. Combine strawberries and rhubarb in a mixing bowl. Combine next 5 ingredients in another bowl. Fold dry ingredients into strawberry and rhubarb mixture. Stir in butter and toss. Transfer fruit mixture to a buttered deep 9 inch baking dish. Bake 40-45 minutes or fruit is bubbly. Spoon fruit mixture onto baked puff pastry sheet and serve.
