Devils on Horseback

A wonderful appetizer for parties and casual get-togethers.

Prep Time: 10 Minutes Cook Time: 6 Minutes Total Time: 16 Minutes

Ingredients:

  • 8 bacon rashers
  • 12 pitted prunes
  • 12 oysters, on the shell or bottled
  • 2 tablespoons Worcestershire sauce
  • Tabasco sauce, to taste

Instructions:

1. Soak 24 wooden skewers in water for 30 minutes. Trim the rind from the bacon and cut each rasher into three pieces. Wrap a portion of bacon around each prune and secure with a skewer. 2. Remove the oysters from their shells, or drain from the bottling liquid. Sprinkle lightly with Worcestershire sauce and ground black pepper, to taste. Wrap each oyster in bacon, securing with a skewer as before. 3. Cook under a preheated grill or lightly oil the outer edge of a preheated barbecue flat plate. Cook the savories, turning occasionally, until the bacon is crisp. 4. Serve warm, sprinkled with a dash of Tabasco sauce. -- Recipe provided by James Mills-Hicks, Murdoch Books, Sydney, Australia
