Tropical Cupcakes

  • 1 cup all purpose flour
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1 egg, lightly beaten
  • 1/2 tsp. vanilla extract
  • 1/4 cup walnuts, finely ground
  • 10 oz. guava halves, drained and puréed
  • 1 cup pineapple topping


  • Serves 8

Preheat oven to temperature 350°F. Lightly butter 8 muffin tins or line with paper muffin liners and set aside. Combine flour, sugar and baking soda in a food processor or mixing bowl. Stir in egg, vanilla, walnuts and guava. Mix thoroughly. Fill muffin tins 2/3 full with batter. Bake 25-30 minutes or until tester comes out clean when inserted in center. Let cool 5 minutes before turning out onto a rack. Serve with pineapple topping.
