Preheat the oven to temperature 350°F. Place the breadcrumbs, apricots, coriander, pistachio nuts, half the butter, and seasoning in a bowl and mix well. Place each trout on a large sheet of buttered foil. Spoon half the stuffing inside each cavity. Brush the trout with melted butter and enclose the foil around each one. Place on a baking tray and bake for 25-30 minutes. Remove from foil and serve immediately.
i thought this sounded really unusual but decided to give it a go for my husbands birthday as he is a chef!
it was so quick and easy to make that my young daughter helped, the fish was moist and a delight to the taste buds, not to sweet but i can honestly say this will be made again soon.
