Maple Gravy

Description

Ingredients

  • 3 Tbsps. fat from roast turkey drippings, or butter
  • 3 Tbsps. all purpose flour
  • 1/2 cup reserved turkey cooking juices, or chicken stock
  • 1-1/4 cups chicken stock, or giblet stock
  • 1/2 cup pure maple syrup

Preparation

  • Serves 4

Heat turkey fat in a heavy pan over medium heat. Add flour and stir constantly 2-3 minutes until flour turns golden. Slowly stir in remaining ingredients and salt and pepper to taste. Simmer mixture about 10 minutes, stirring frequently until gravy thickens.

Reviews

This was very rich--I made it with butter instead of the pan drippings. The sweetness was a nice change of pace.
